I am not too happy with the current windows. I would be really glad to switch into windows 8.1 if theres a way?
I plan to change my windows 11 to windows 8! is this possible?

It's possible but wouldn't recommend at all due to drivers and cut support.
I'd recommend Windows 10 LTSC instead, as it still has support right now and is basically just as lightweight as the final Windows 8.1 build.
Either way, you can get them both versions from Bob Pony's Microsoft Archive from the front index of this forum
Put on a USB by either Rufus (Single ISO) or Ventoy (Multiple ISOs on one USB)

I do plan on going back to Windows 8.1 because theres no ridiculous password entry when you start up Windows at the time back then! Since Windows 11 it was a very rough experience for me as I never been back on Windows for YEARS! I been stuck on Mac for a long time and badly regret it. I was finally able to afford PC in order to go back to it. Problem is limited storage space and I never been on a Laptop before but I am getting used to it! Problem is my usb port is not working I plan on taking it for repairs once I get the money!
